Mimi's Deviled Eggs

I love deviled eggs.

Mimi's Deviled Eggs
Boil eggs (we with have eggs from our friend Randy's chickens or we buy organic in our grocery store)
Peel eggs.
Separate whites from yokes.

Mash yokes with a fork and add your preferences.  We prefer mayonnaise, dill relish, salt, and Black Pepper Essential Oil. (Our dill relish is Bubbies Dill Relish).  I added 2 drops of Black Pepper Essential Oil for a dozen eggs - and I just add enough mayonnaise to have a creamy mixture (we prefer Duke's mayonnaise).

Yes - that is correct - Black Pepper Essential Oil.

Pop's Crusted Tilapia


This is so easy and good!

Pop's Crusted Tilapia

Tilapia filets (see below - we buy a Walmart!)
Wavy Lays or Ruffle Potato Chips
Mayo
Seasonings

Pre heat an iron skillet in a 400 degree oven.  When it is hot - add grape seed oil - or olive oil.

Add a single layer of tilapia filets.  We had 4 to a small iron skillet.

Crush chips with food processor - add seasonings - we prefer Jane's Crazy Salt and Tony Chachere's Creole Seasonings.

Smear mayonnaise on the top of the filets (we used Duke's).  The mayo holds the chips in place.

Pour chips on top of the fish.  Lightly pat to secure.

Bake at 400 degrees until chips are browning.  We baked ours for about 10 minutes (I think - I did not watch the clock!).

Really great served with black beans & rice.

Coconut Blueberry Chia Muffins



This recipe is from Nephew One and his Girlfriend.  It is so good!  I actually forgot to get chia seeds at the store so I used flaxseed instead and they were wonderful!  Even Sweet Baby One loved the muffin too!

Great for breakfast or a snack.

Coconut Blueberry Chia (or Flaxseed) Muffins

1 cup organic coconut flour
1/2 tsp. sea salt
1 tsp. baking soda
1/2 cup + 2 T raw honey
1 cup coconut milk
6 eggs
1/4 cup organic coconut oil, melted
4 tsp. vanilla extract
1/4 cup chia seeds (or flaxseed)
1 cup fresh organic blueberries

Preheat oven to 350 degrees.  Mix the coconut flour, salt & baking soda in a bowl.  In a separate bowl or blender, whisk honey, coconut milk, eggs, coconut oil and vanilla.  Gently stir wet & dry ingredients together and mix in chia seeds or flaxseed.  Fold in blueberries.  Fill baking cups - either lined or greased (I used my Pampered Chef muffin baker).  Bake about 25 minutes until golden brown.  Remove from pan and let cool.    

Ready for the muffin cup!
